Butternut Squash Mac ‘n Cheeze
So easy to make this Butternut Squash Mac ‘n Cheeze using nutritional yeast. We sometimes refer to it as Mac ‘n Yease, because it contains nutritional yeast. You can also use the sauce in many other dishes. Top nachos or leave in a crock pot for fondue and chips ‘n dip.
Butternut Squash Mac 'n Cheeze
Comfort food with only wholesome ingredients. This dairy-free recipe can also be made gluten-free if you use quinoa or brown rice pasta.
- 4 cups butternut squash (oven roasted)
- 3 cloves garlic
- 1 1/2 cups almond milk (or other non-dairy milk)
- 1 tbsp chipotle sauce
- 1 cup nutritional yeast
- 1 tbsp tapioca
- 2 cups whole wheat elbow pasta (cooked)
- 1 tsp salt
- 1 tsp ground black pepper
- Preheat oven at 400 degrees.
- Roast whole butternut squash on a cookie sheet for about 45 minutes until tender.
- Let cool and then peel the skin and remove seeds.
- Mix everything together in a high speed blender until all the ingredients are combined and creamy.
- In a sauce pan add the pasta then the cream and combine everything together.
- Serve with your favorite veggies. We like to use broccoli and carrots.
