Before our plantbased journey we used to love buying bran muffins from the store. We found them too sweet and of course they have many ingredients we do not eat on a plantbased lifestyle. We created this version using unrefined sugar…They are oil-free, dairy-free, egg-free and use whole wheat and bran flour. These make nice and hearty muffin filled with wholesome goodness ingredients. These are hearty…No need to go back and crave the bad muffins. Because these come out so delicious, you can enjoy it even more at each bite. Plantbased eating is a life style where you can enjoy many foods and opens your mind to alternatives.

  • 1 cup whole wheat flour (white)
  • 1/3 cup wheat bran
  • 1/2 cup coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 pinch salt (sea or pink Himalayan)
  • 1 1/4 cups almond milk (non-dairy)
  • 1/2 cup apple sauce (unsweetened)
  • 2 tbsp flax seeds (ground)
  • 1 tsp vanilla extract
  • 1/4 cup raisins
  • 1/4 cup sunflower seeds
  1. Preheat oven 350 degrees
  2. In a large bowl stir together all the dry ingredients
  3. Add the wet ingredients and stir until gently mixed
  4. Line a 12 muffin tin with paper liners
  5. Spoon into muffins cups
  6. Bake for about 25 minutes or until toothpick comes out clear
  7. Let them cool
  8. Enjoy
