Bulgur Bean Chili
This Bulgur Bean Chili is an easy recipe which you can prepare a night prior, throw it all into the crock-pot, turn it on, and have a warm hearty meal when you come home from work or school.
Bulgur Bean Chili
An easy crock-pot recipe, just prep, combine, set it, and forget it.
- 2 can kidney beans (rinsed and drained)
- 1 can black beans (rinsed and drained)
- 7-8 cups vegetable broth or water (low sodium)
- 4 carrots (chopped)
- 1 cup bulgur (washed)
- 3 sticks celery (chopped)
- 1 bell pepper (chopped)
- 3 tomato (chopped)
- 1 cup corn (fresh)
- 1/2 onion (chopped)
- 1 clove garlic (chopped)
- 1 can tomato (chopped)
- 2 tbsp tomato paste
- 1 whole bay leaf
- 1 tbs chili powder
- 1 tsp cumin
- 1 pinch salt (to taste)
- Prep ingredients
- Combine in a crock-pot
- Cook for 4 to 6 hours
- Serve
We enjoy topped with our cashew sour cream, avocado, radish, fresh cilantro, and a squeeze of lime.
