Bulgur Bean Chili

This Bulgur Bean Chili is an easy recipe which you can prepare a night prior, throw it all into the crock-pot, turn it on, and have a warm hearty meal when you come home from work or school.

Bulgur Bean Chili

An easy crock-pot recipe, just prep, combine, set it, and forget it.

  • 2 can kidney beans (rinsed and drained)
  • 1 can black beans (rinsed and drained)
  • 7-8 cups vegetable broth or water (low sodium)
  • 4 carrots (chopped)
  • 1 cup bulgur (washed)
  • 3 sticks celery (chopped)
  • 1 bell pepper (chopped)
  • 3 tomato (chopped)
  • 1 cup corn (fresh)
  • 1/2 onion (chopped)
  • 1 clove garlic (chopped)
  • 1 can tomato (chopped)
  • 2 tbsp tomato paste
  • 1 whole bay leaf
  • 1 tbs chili powder
  • 1 tsp cumin
  • 1 pinch salt (to taste)
  1. Prep ingredients
  2. Combine in a crock-pot
  3. Cook for 4 to 6 hours
  4. Serve

We enjoy topped with our cashew sour cream, avocado, radish, fresh cilantro, and a squeeze of lime.
