Lime Coconut Brown Rice

Who said Brown Rice has to be boring? There are a lot a different ways to prepare brown rice. Some people do not like the flavor or texture of it, but you can make it more fun and really enjoy it. We saw many other similar recipes, but we want to made it a little bit more hearty by adding more vegetables. That way you can eat you full dish, and of course we eliminated the coconut oil, you don’t need it because we already are using the coconut milk, which contains fat…a good fat. The combination of all the ingredients make this dish so flavorful, that you will want to have more of it.

  • 1 1/2 cups brown rice (uncooked)
  • 3 cups water
  • 1 juice of lime
  • 1 cup organic coconut milk (+2 tbsp set aside)
  • 2 shallots (chopped)
  • 1 tsp fresh ginger or ginger powder
  • 2 cups carrots (finely chopped)
  • 2 cups broccoli florets (finely chopped)
  • 2 cups peas (fresh)
  • 1 cup mushrooms (finely chopped)
  • 1 tsp salt (sea or Himalayan)
  • 1/2 cup cilantro (fresh chopped)
  • 1 tsp lemon pepper

Prep

  1. Rinse and drain rice under cold water.

Pre-cook

  1. In a medium pot add the rice, shallots, ginger, salt, water, lime juice, and 1 cup of coconut milk.
  2. Cover and bring to boil. Reduce heat to low and cook for 25-30 minutes.

Cool

  1. Remove from heat and let it cool for 5 minutes.
  2. After cooling fluff with a fork.
  3. In another pan with medium heat quickly saute carrots, broccoli, peas, mushrooms, and the remaining 2 tbsp of coconut milk and cover for 2-3 minutes

Combine

  1. Add the cooked rice, lemon pepper, and cilantro gently incorporating everything together and serve.
