Mexican Rice Bowl
A hearty and satisfying Mexican Rice Bowl with black beans, brown rice, corn, and tomato. Enjoy this delicious bowl for dinner or great for potlucks.

Mexican Rice Bowl
A hearty and satisfying Mexican Bowl
- 3 cups brown rice (cooked)
- 1 1/2 cup black beans (rinsed and drained)
- 1/4 onion white (chopped)
- 1/2 yellow bell pepper (chopped)
- 1 cup corn (fresh)
- 1 yellow squash (chopped)
- 2 tomatoes (chopped)
- 2 tbsp vegetable broth
- 1/2 tsp lemon pepper
- 1 pinch salt (sea or pink)
- 1/4 cup cilantro (chopped)
- In a saucepan on medium heat sauté onion and bell pepper for 2 minutes
- Add the vegetable broth, squash, corn, salt and lemon pepper
- Mix all together, then cover
- Let it cook for 3 minutes.
- Turn off the heat
- Add the brown rice, black beans, tomato and cilantro
- Mix everything together
- Ready to enjoy with avocado sauce
