PB&J Plantain Chia-Oats

We love making this creamy overnight chia-oats and play with different flavors and textures. This is a great make-ahead protein-packed breakfast that will absolutely keep you full all morning. A hearty, on-the-go breakfast option for busy mornings. This creation was created because we love PB&J and banana. Enhancing the flavor with grilled plantains. Instead of using jelly, we used a fresh chopped strawberries. Great flavors and good source of protein and omega.
Chia seeds have been a staple in Mayan and Aztec diets for centuries. Now they are so popular and easy to find, we incorporated chia in a lot of our recipes.

  • 1 cup rolled oats
  • 1 cup chia seeds (raw)
  • 2 1/2 cups almond milk (non-dairy)
  • 1 tbsp maple syrup
  • 3 strawberries (chopped)
  • 1 banana puree
  • 1/2 plantain grilled
  • 2 tbsp chocolate peanut butter (non-dairy)

Day Before

  1. In a mason jar or small bowl, add almond milk, chia seeds, oats, banana puree and maple syrup
  2. Combine with a spoon
  3. Cover with a lid or plastic wrap
  4. Set in the refrigerator overnight

Next Day

  1. Grill the plantains in a ceramic or non-stick a nonstick pan.
  2. Open the mason jar
  3. Add the chocolate peanut butter, fresh chopped strawberries, and plantains
