Caesar Salad Dressing
A great Caesar salad gets its swagger from a great dressing. The original recipe of the dressing has many ingredients than we cannot eat. That is why we decided to create a healthy plant-based dressing version with the perfect flavor. The capers give it that tart flavor we always enjoyed.
- 1 cup cashews (raw soaked and drained)
- 2 tsp capers (rinsed)
- 1 clove garlic
- 2 tsp chia seeds (raw)
- 1 tsp salt (sea or pink Himalayan)
- 2 tbsp nutritional yeast
- 1 tsp ground black pepper
- ½-1 cup almond milk (unsweetend)
- 1/4 cup lemon juice (~juice of 2 lemons)
- 1 tsp dijon mustard
- 1 1/2 tbsp maple syrup
- In a high speed or regular blender mix all the ingredients, until they get combined and very smooth.
Using a high speed blender helps to get a creamier/smoother texture.
