Mexican Rice Bowl

A hearty and satisfying Mexican Bowl

  • 3 cups brown rice (cooked)
  • 1 1/2 cup black beans (rinsed and drained)
  • 1/4 onion white (chopped)
  • 1/2 yellow bell pepper (chopped)
  • 1 cup corn (fresh)
  • 1 yellow squash (chopped)
  • 2 tomatoes (chopped)
  • 2 tbsp vegetable broth
  • 1/2 tsp lemon pepper
  • 1 pinch salt (sea or pink)
  • 1/4 cup cilantro (chopped)
  1. In a saucepan on medium heat sauté onion and bell pepper for 2 minutes
  2. Add the vegetable broth, squash, corn, salt and lemon pepper
  3. Mix all together, then cover
  4. Let it cook for 3 minutes.
  5. Turn off the heat
  6. Add the brown rice, black beans, tomato and cilantro
  7. Mix everything together
  8. Ready to enjoy with avocado sauce
